Simple Pecan Catfish

Mmmmm this fish dish is delicious. Give it a try :) .

List of ingredients:

4 catfish fillets.
1 cup of ground pecans.
3 tablespoons of Dijon mustard.
2 tablespoons of milk.

Method:

Preheat your oven to 500F.

In a small bowl, combine the Dijon mustard and milk.

Dip the catfish fillets into mustard mixture, then dip into the ground pecans, shaking off excess.

Place on a greased baking sheet.

Oven-fry for about 10-12 minutes or until the fish flakes easily.

Homemade Mincemeat :)

Here is a great recipe for making your own mincemeat!

Ingredients list:

1 lb of beef neck.
1/2  lb of suet.
2 lb of tart apples, pared and cored.
2 1/2 cup of sugar.
2 1/2 cup of dried currants.
4 1/2 cup of raisins.
1/2 cup of mixed candied fruits and peels, chopped.
1 1/2 teaspoons of grated lemon peel.
1/4 cup of lemon juice.
1 cup of orange juice.
2 1/2 cup of water.
1 1/2 teaspoons of salt.
1/2  teaspoon of mace.

Method:

In a stew pot, cover the beef neck with water and cook until the meat is tender (about 3 hours).

Drain and cool. Either discard the beef broth or save it to be used for something else.

Put the meat, suet and apples through a meat grinder.

In a large kettle, blend the meat and apple mixture with all of the remaining ingredients.

Cover and simmer for about 60 minutes.

Yields 12 cups of mincemeat.

Simple Blueberry Sauce

Here is a quick and easy way of making super blueberry sauce:

List of ingredients:

10 oz of blueberries, either fresh or frozen.
1/2 cup of water.
1/2 cup of granulated sugar.
1 tablespoon of cornstarch.
1 tablespoon of lemon juice.

Method:

In a suitably sized saucepan, combine all of the ingredients and stir well.

Heat and stir over medium heat until boiling.

Gently simmer for about 5 minutes until the blueberries release their juices.

Serve either warm or cold.

Cajun Shrimp Soup

Here is a Cajun-style variation on shrimp soup:

Ingredient list:

8 cups of chicken stock.
2 teaspoons of Louisiana hot sauce.
1 cup of chopped green onions.
1/2 cup of chopped celery.
Salt, to taste.
1 tablespoon of garlic, diced.
1 tablespoon of Worcestershire sauce.
1 cup of chopped parsley.
1 1/2 cups of dry white wine.
2 lbs of shrimp, chopped.

Directions:

Put all of the ingredients except the shrimp in the chicken stock.

Bring to boil and then lower heat.

Cover, and cook for 45 minutes.

Add shrimp and simmer for another 30 minutes.

French Chicken Stuffing

This stuffing is much easier to make than it sounds, give it a try! :)

List of ingredients:

4 chicken livers.
1/2 cup of onions.
2 tablespoons of olive oil.
2 tablespoons of butter.
3 slices of white bread.
2 tablespoons of parsley, finely chopped.
Salt and black pepper.
1 medium egg, beaten.
1/2 cup of white wine.

Instructions:

Dice onion and livers.

Saute the chicken liver and onion in the olive oil and butter until golden.

Add the diced bread and parsley and cook for a few minutes, stirring continuously.

Season with salt and black pepper.

Transfer to a bowl and allow to cool.

Stir in beaten egg and white wine.

Use for roast chicken or turkey.

Lobster Casserole

Ingredient list:

1 egg, well-beaten.
1 1/2 cups of lobster meat.
1 cup of milk.
1 cup of soft breadcrumbs.
2 tablespoons of butter.
1 tablespoon of lemon juice.
1/2 teaspoon of dry mustard.
Crushed cornflakes.

Instructions:

Preheat your oven to 350F.

In a baking dish, combine all of the ingredients and top with crushed cornflakes.

Bake for an hour.

Carrot Coleslaw

This coleslaw is a great simple homemade side if you’re having a party!

List of ingredients:

2 medium carrots, shredded.
1 cup of green cabbage, shredded.
1/2 cup of red cabbage, shredded.
1/2 cup of light mayonnaise.
1 tablespoon of skim milk.
1 tablespoon of lemon juice.
1/2 teaspoon of sugar.
Black pepper, to taste.

Directions:

In a large bowl, combine the shredded vegetables.

Whisk together the remaining ingredients and pour over the salad.

Refrigerate for 1 hour before serving.

Baked Onion Rings

I found out these snacks can be baked rather than fried. Enjoy, but have a mint afterwards :p

List of ingredients:

1 1/2 cup of crushed corn flakes.
2 teaspoons of sugar.
1 teaspoon of paprika.
1/4 teaspoon of seasoned salt.
1/4 teaspoon of garlic powder.
2 large sweet onions.
Egg substitute, equivalent to 2 eggs.
Nonfat cooking spray.

Instructions:

In a bowl, combine the corn flakes, sugar, paprika, salt and garlic powder. Set aside.

Cut the onions into half-inch thick slices.

Separate into rings, saving small rings for another use.

In a small mixing bowl, beat the egg substitute until it is frothy.

Dip the onion rings into egg, then into the crumb mixture, coating thoroughly.

Place in a single layer on baking sheets that have been sprayed with nonfat cooking spray.

Bake at 375F for about 18 minutes or until the onions are tender and coating is crispy.

Chewy Coconut Cookies

I made these cookies for my neice who absolutely loved them :) .

Ingredient list:

2 cups of flour.
3/4 cups of sugar.
3/4 teaspoon of baking soda.
1/4 teaspoon of salt.
1/2 cup of dark corn syrup.
3 tablespoons of vegetable oil.
1 teaspoon of vanilla.
1 teaspoon of coconut extract.
2 medium egg whites.
1/2 cup of flaked coconut.
Vegetable cooking spray.
2 tablespoons of coconut, toasted.

Instructions:

Preheat your oven to 350F.

In a large bowl, combine the flour, sugar, baking soda and salt; blend thoroughly.

Combine the dark corn syrup, vegetable oil, vanilla, coconut extract and egg whites; blend thoroughly.

Stir into the dry ingredients, until just combined.

Add the ½ cup of flaked coconut.

Drop by level tablespoons onto a baking sheet coated with vegetable cooking spray.

Sprinkle with the toasted coconut.

Bake for 8 minutes; then remove to wire racks to cool.

Blonde Brownies

Try these brownies, they are blonde, just like me! :)

List of ingredients:

2 medium eggs.
1 1/2 cups of brown sugar.
1 1/2 cups of whole wheat pastry flour.
1 cup of chopped pecans.
1/2 cup of melted butter.
2 teaspoons of baking powder.
1/2 teaspoon of salt.
1 packet of chocolate chips.

Instructions:

In a suitably sized bowl, mix all ingredients together.

Pour into 8-inch square baking pan.

Bake at 350F for 25 minutes or until golden brown. Use the toothpick test to check if done.
